Cheesy Chicken Sauce
I made a sauce tonight that was a big hit with the family! I happened to have all of the things on hand, thank goodness!
I tend to wait until the last minute to start dinner, I seriously need to meal plan! So I have been working on an easy sauce to add to pasta and a meat. Thank goodness my family tolerates my attempts! I have gotten much better over the years I am proud to say.
This meal was ready in 20 minutes! Just long enough to make the cheesy sauce and boil the pasta and veggies (which I did in the same big pot!).
Here is what I threw together: butter, milk, shredded cheese (use any kind you like, I used a blend of nacho/taco and mozzarella), cornstarch, some spices and canned chicken.
Here is the close up of the sauce as it bubbles away in my pan.
Ready to mix up my cheesy chicken sauce with tri-colored twist pasta and mixed veggies.
Hmmmmmm, simply delicious!
Here you go, Cheesy Chicken Sauce!
Ingredients
1/2 stick of Butter
2 cups of Milk
3 cups of Shredded Cheese
2 tablespoons of Cornstarch
1 teaspoon of Spices (I used a hot blended store bought brand)
1 good shake of Goya Adobo spice (this is a staple in my house)
2 tablespoons Water
2 (13 oz.) cans of canned white meat chicken
Directions
In a sauce pan add the butter and milk on medium heat. Stir constantly so the milk does not burn. Once the butter melts, add in the shredded cheese and stir until it melts.
Bring the mixture to a boil. While you are waiting for the mixture to boil, in a small bowl combine the cornstarch and water. Once your mixture comes to a boil, slowly add the cornstarch to the sauce pan, stirring constantly and quickly until the cornstarch is completely blended into the mixture.
Stir constantly for about 2-3 minutes, once it begins a rolling boil, turn down the heat to medium.
Add in your spices.
Drain your cans of chicken, separate the chicken pieces if needed, and add to your cheesy sauce.
Cook for an additional 10 minutes, stirring occasionally.
Pour over your choice of pasta and/or veggies, mix and enjoy!
