Mini Eggy Bites
This recipe is oh so easy and so easy to change up. Essentially, all you need is eggs, everything else, is your choice of ingredients.
When we made these, we used eggs, pork sausage and shredded cheese…..perfect yumminess!
So, here is what you need to get started.
Ingredients:
a muffin pan (or two depending on your family size)
non stick spray
1/3 cup measuring cup
eggs
Directions:
Preheat your oven to 375 degrees
Spray your muffin pans with the non stick spray. Scramble your eggs, for {2} 12 cup muffin pans, I used 17 eggs. Depending on how many you want to make, scramble accordingly.
Using your measuring cup, add the scrambled eggs to each muffin cup, filling it about 2/3 of the way full.
Add your other ingredients by sprinkling them on top of the scrambled egg.
**If you are using meat, you must cook and drain the meat before adding it to your eggs.**
Put the muffin pans in the oven and bake for 30 minutes. Eggs will fluff up and cook completely.
Let them cool for a few minutes then pop them out and enjoy!
